I highly recommend Tapestry Press.  Their goal is:

To emphasize and promote environmental science education for adults.

Understanding the basics of air, water, soil and energy science connects us to nature.  Understanding the complexity of diversity, niches, food chains and decomposition fills us with awe and makes us humble.  Observing the intricate beauty of all life nourishes our spirit.

The looming monsters of human overpopulation, resource depletion, air, water & soil pollution alarm and threaten us.

Sustainable practices slow resource depletion. Bioremediation cleans some polluted sites.  Reducing consumption and reevaluating personal values increase joy.

Environmental science education guides folks along this path.  The greater our understanding, the greater our respect for nature.  The greater our understanding, the greater our appreciation of the simple life.

To advance our goal we publish environmental science laboratory books for college students.

Environmental Science Workbook by Elizabeth Waldorf

Elizabeth Waldorf. 2000. 199 pages.

This spiral-bound introductory laboratory manual includes 30 exercises designed to be performed on campus and are directed to college freshmen with no previous college science experience.

Covering everything from the fundamentals of instruments and graphing to environmental problems, this lab manual is designed to teach students about the various aspects of ecology. Each lesson provides rich background information and comes with separate lab report sheets so the book can be reused.

The Workbook contains exercises rich with information; a separate volume contains lab reports to be filled out by students at the end of each lab period. By publishing the Workbook and Lab Reports separately, the Workbook can be reused. Lab Reports are punched for a 3-ring binder.
